1/2 Small Pumpkin
250 g Mushrooms
2 Tbs of Olive Oil
2 Celery Sticks
Salt to taste
1.5 Lts of water
2-3 Tbs Sour Cream (Optional)
Clean the seeds and wash the pumpkin. Peel off the skin and cut it into thin slices. Sprinkle some salt and and Olive oil and roast the pumpkin in 240 C. for 20-25 mints until golden brown in color. Leave few slices to garnish and cut them into thin slices. Leave aside.
Boil the Mushroom and blend the mushroom with roasted pumpkin until well combined. Boil the whole mixture and add sour cream, salt and pepper.
Serve into a soup bowl and garnish and sprinkle thinly sliced mushroom and thinly sliced roasted pumpkin on top and enjoy.
